Chicken Soup for the... sick.

This past weekend I came down with head cold. Booo! And what better remedy for a cold than chicken soup? Last night I headed to the grocery store to buy some, but all I could think about was the BEST chicken broth I have ever eaten. It was served to me in a hut in Sahanintsina, Madagascar. When you are a guest in someone's house in Madagascar you are presented with either a rice and chicken feast, or a shot of local moonshine.
Yup, that is the meal. A giant mound of rice, with small plates of chicken and broth. AMAZING broth. Oh, and that rice? We needed a refill on the rice plate. Seriously.
But now that I have a head cold, all I can think about is that delicious broth. So trolling the soup aisle last night wasn't cutting it. So instead, I decided to attempt my own homemade chicken soup. First I went over to the deli counter to get the fresh roasted chicken. I picked up some baby carrots, chicken broth, and egg noodles. I put them all in my dutch oven and let it simmer for 2 hours. Oh, and I added garlic salt, pepper, basil, oregano, pretty much every spice in my cabinet.

YUM. It was exactly what I wanted. Next time, I might do more of a dumpling rather than egg noodles, but it was so tasty. Oh, and yes I did go Malagasy and leave the bones in the soup. I had to warn poor Joey before he dug in!
